Family business with the Founder, Mr George D Stewart. Mr Stewart ventured into the water business over 15 years ago and then decided to move into whisky distillation with the obvious connection of water! The project has taken ten years to come to fruition, with an epic five years to gain planning followed by a number of challenges along the way.
The majority of the equipment throughout the distillery is new, with equipment from the distilling industry giving authenticity and and known quality of spirit. Key equipment to highlight in this area would be the Caperdonich Mash Tun and Wash and Spirit stills. Two 20,000 litre hot liquor tanks and six 20,000 litre fermentators, fabricated by Forsyth of Rothes have also been installed.
The process benefits from a Buhler Roller Mill with a working capacity of approximately 3t/hr. Water is sourced and pumped from a borehole on the site.
The operation of the equipment is mainly a traditional operation however there are three main control loops that are critical to maximise yields, and automation for these areas.
The process is managed by our head engineer and distillery manager, Graham Brown.
